Ingredients You’ll Need
- 4 Shredded Potatoes
- 1 Chopped Small Onion
- 1 Clove of Minced Garlic
- 1 Container Frozen Hatch
- New Mexico Green Chile Peppers
- 1/2 Cup of Chicken Broth
- 12 Strips of Bacon
- 1/3 Cup of Vegetable Oil
- 1 Tablespoon of Onion Powder
- Salt and Pepper (depending on taste desires)
- 6 Flour tortillas (10 inches around)
- Butter Cooking Spray
- 12 Large Beaten Eggs
- 2 Cups of Shredded Cheddar Cheese

How to Make it
Step 1: Place your shredded potatoes in a mixing bowl, cover the potatoes with water, and then set them aside. Bring the onion, garlic, green chilies, and chicken broth to a boil. Do this in a saucepan over high heat. After a while, you’ll want to reduce the heat and simmer until the sauce begins to thicken. When the sauce has thickened completely, turn off and remove the pan completely from the heat.
Step 2: In the meantime, place your strips of bacon on paper towels on a microwavable plate, and cook until crisp. This should take about 1 minute for every strip of bacon. After, you can set it aside.
Step 3: Begin to heat the vegetable oil over higher heat. Next, drain the water from the potatoes, and add them to the skillet. You’ll want to carefully spoon the hot oil over the potatoes. Be sure to sprinkle with onion powder, salt, and pepper. Flipping the potatoes occasionally, let them fry until crispy, and make sure the potatoes are cooked through, you can do this by sticking a fork in them to see how tender they are. This should take about 15 minutes.
Step 4: Place your tortillas between two damp paper towels. Begin to microwave until they are warm. The estimated time to microwave is 30 seconds!
Step 5: Spray down a separate skillet with butter-flavored cooking spray and cook the eggs over medium heat, whisking them continuously until the eggs are completely set; turn off the heat.
Step 6: Lay one of the tortillas directly in front of you for easy stuffing. Place a portion of potatoes, scrambled egg, and a strip of bacon on the lower third of the tortilla.
