
When you come home on a hot August day, you might not always feel like sitting down to a hot meal. Everybody has to eat, of course, so something cold might hit the spot without keeping the temperatures so high. Cold soup is a great way to beat the heat and satisfy your appetite, so try any of these cold soup recipes to keep your cool.
Gazpacho
Summers can be sweltering hot in the southern region of Spain, and the locals developed dishes like gazpacho to cool down when temperatures soar. Hailing from Andalusia, this red tomato soup offers wonderful fresh vegetable flavors with a few bitter notes from citrus juice and balsamic vinegar. You can also build on the basics with jalapeño, Worcestershire sauce, and basil leaves. You can always use tomato juice, but you can also prep some ripe tomatoes by quickly blanching them to make them easier to peel. Once you have all the tomato juice you’ll need, add in bell pepper, cucumber, red onion, garlic, and olive oil, plus flavorings like cumin. Blend it all together into a puree, then cover the soup and let it chill in the fridge for at least a few hours before serving.
Vichyssoise
Some soups benefit from a little time in the fridge, as all the flavors can marry while they all chill together. Vichyssoise is a prime example. This potato and leek soup is cooked hot but served cold, and the result is a rich and creamy treat that’s perfect on hot days. You’ll need to peel and chop the potatoes to make them easier to cook down in the pot, and remember to only use the white portion of your leeks (give them a good rinsing, too, as dirt can hide in the folds of the leaves) heavy cream adds texture and chicken stock adds volume, and to finish off the flavors, add a little nutmeg and chives before serving.
